Lamb and Couscous Pilaf

With savory lamb and fluffy couscous, this pilaf is a bowl of cozy flavors your pup won’t be able to resist. It’s a little taste of the Mediterranean, crafted just for them. Get ready for happy munching and maybe even a fancy head tilt of approval.



INGREDIENTS


1 tablespoon olive oil

1 pound lamb, cut into small pieces

1 cup low-sodium chicken or vegetable broth

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon turmeric

1 cup couscous

Salt and pepper, to taste

1 teaspoon plain unsweetened yogurt

Chopped fresh parsley or cilantro, for garnish



INSTRUCTIONS


In a large skillet or pan, heat the olive oil over medium heat. Add the lamb pieces and cook until browned on all sides. Remove the lamb from the skillet and set aside.


In a saucepan, boil the chicken or vegetable broth. Add the couscous to the pan and stir to combine with the ground cumin, ground coriander, and turmeric to the skillet. You can add salt and pepper to taste.


Bring the mixture back to a boil, then reduce the heat to low. Cover the skillet and simmer for about 10-15 minutes, or until the couscous is cooked and the liquid is absorbed.


Once the couscous is cooked, return the lamb to the pan and stir to combine with the pilaf.

Remove from heat and let the pilaf sit, covered, for a few minutes to allow the flavors to meld together.


Serve the lamb pilaf cooled and mix in a teaspoon of plain, unsweetened yogurt for extra creaminess. Garnished with chopped fresh parsley or cilantro for extra flavor and nutrients.
